This evening I wanted something so different for dinner. I am doing Nutrisystem and need to supplement the meals with free vegetables. I can eat vegetables pretty much nonstop but sometimes I want it to be colorful and fun. And tonight was one of those times. I wish I had time to do this prep every day – then my diet would be so much more successful on a regular basis. But I most often don’t have that kind of time.
I am a huge fan of raw veggies – I love the color and the crunch.
This salad has the following – all chopped up and mixed together.
Red tomatoes
Orange tomatoes
Red peppers
Yellow peppers
Orange peppers
Celery
Cucumbers
Red Onions
I will definitely be making this again – and the only change I may make is the addition of avocado. Doesn’t it look and sound totally delicious? My husband may not care for me having the onions so much but I love them.
