Okay so this is not officially a stew. It is something I created to achieve what I desired. Call it whatever you want but what I was striving for was the inside of a chicken pot pie without the crust. WARNING: Not a low fat recipe – proceed with caution.
Two crockpots needed or make one portion first then the second and combine later.
In one crockpot cook your chicken based on the previous recipe post (just a chicken and its crockpot –
nothing more nothing less)
In another crockpot – combine all the following:
1 can corn
1 can peas (I use small peas)
1 can diced potatoes
1 can diced carrots
1 carton chicken broth
1 bar cream cheese
Let it all cook and simmer for about 6 hours on low. Then take apart your chicken and add as much as you want to the stew. Enjoy.
Now many of you know that I am not a big meat eater – though I do like and tolerate chicken. But if I am just making this for me (which sometimes happens) – I will skip the chicken all together. I could never ever live without the cream cheese though!
