This is one of my favorite foods to bake (though I must admit this particular batch didn’t fare so well). I always buy holiday cake mixes etc… when they go on sale. Cake mixes can be used for so many things. We actually almost never eat cake – but we do eat muffins, cookies, bars and stuff. For basic cookies you take a cake mix (again poor choice for me today) – I was thinking using a Butter Pecan cake mix would make for nice Butter Pecan cookies – NOT! But assume I didn’t slip off the beaten path – assume it was a yellow cake mix – do you have it pictured in your mind now? Good – we can proceed.
So you take that yellow cake mix, add a 1/2 cup of vegetable oil and 2 eggs. You can either keep it like that and it will come out sort of sugar cookie tasting (we never leave it like that) – or you add “stuff” in. I always buy whatever flavor/brand baking chips I can get on sale and stack it with coupons. I have quite a variety stocked up. We sometimes go with one flavor, sometimes multiple. But to go basic – just add some semi-sweet chocolate chips and you have yourself a cheap, very tasty batch of chocolate chip cookies AND just four ingredients. I have a very short attention span sometimes so a list of ingredients more than four or five deep – you lost me already. It may be the greatest recipe in the world but I won’t be able to do ten things at the same time – so I pass on it.
Moral of this story – swap in/out different flavor cake mixes and in/out different flavor mix-ins and you can have a huge assortment of flavorful cookies. Just stay away from Butter Pecan cake mix – first batch I didn’t like. And just for the record my kids call these Cakies not Cookies.
