What to do when you are missing an ingredient

A coworker and I were talking about a recipe the other day and how she started it, realized she didn’t have oil and what she came up with as a solution that worked out great.  I figured I would share things I have done:

When lacking vegetable oil I have used Olive Oil; applesauce (much healthier alternative), pureed pumpkin (another healthy alternative), and/or mayonnaise (not such a healthy alternative – but immensely moist) – her solution – sour cream. 

So next time you are missing an ingredient – just think outside the box.
