Today’s Menu – Crockpot Lasagna
This is one of my favorite meals and the ability to make it in a crockpot makes me very happy. It can be made with many more ingredients and additions but my family likes it very basic – so that is what I do. Plus, since this is made in a crockpot while camping – it needs to involve minimal fuss.
Ingredients:
No boil lasagna – one box
Spaghetti Sauce – large jar
Hamburger – 1 1/2 pounds
Ricotta Cheese – Large container
Mozzarella Cheese – LOTS
I have made this with normal lasagna and it is okay when freshly cooked but becomes quite pasty when reheated. The no boil lasagna works best in this recipe.
First you brown your beef – that is the one task that can’t be completed directly in the crockpot.
Layer the ingredients in any order you wish – I start with hamburg, lasagna, sauce, ricotta, mozzarella and repeat. Since I use a 7 quart crockpot I can sometimes get three layers in but two is more than enough.
Heat on low for approximately 6 hours and let cool a bit before serving.
It is awesome. When reheating as leftovers you may wish to add some additional sauce and/or cheese.
Easy enough to make while camping and still participating in all the available activities while still offering the ability to have something other than hamburgers or hot dogs.
