Caramel Pumpkin Cupcakes

This is another low sugar recipe.  I look for any recipes that utilize cake mix because I can always score cake mixes really inexpensively and sometimes free with coupons and deals.  These are awesome.  Sometimes I make them without the caramel topping because that can be a little messy. 

2 cups cake mix
1 cup canned pumpkin
1/3 cup ff egg substitute
2 tablespoons sf maple syrup
2 tsp cinnamon
2 tsp granulated splenda
1/8 tsp salt
Mix all together and cook til a toothpick comes out clean – approximately 15 minutes at 350 degrees.
3 cubes chewy caramel
2 tsp light vanilla soymilk
Melt these ingredients together and drizzle over the cooked cupcakes.
Possible addition – blueberries)
