Blueberry Fruit Squares
This is one of my favorite desserts. It is a recipe I got from my mom many years ago. I don’t remember honestly if she ever made them too much but I know I love them. I actually only love them as blueberry (you can use any flavor canned fruit).
To make them you need an 11×9 baking pan/dish and the oven should be preheated to 350 degrees.
1 cup butter (softened)
2 cups sugar
1 tsp vanilla
3 cups flour
1 can pie filling
Cream the butter and sugar then add one egg at a time, fully mixing after each egg. All mixing is done by hand. Once all four eggs have been mixed in, add in the vanilla and flour. The batter will be very stiff.
Spray Pam butter spray on your pan then spread 2/3’rds of the batter along the bottom of the pan then spread the can of fruit along the entire top. Lastly, drop spoonfuls of the remaining batter on top of the fruit.
Bake til just starting to brown – approximately 40-50 minutes.
Once it cools you can cut it up into squares.
