Make Raw Veggies Last Longer
I tend to buy pre-made salad mixes but often I don’t get to the bottom of the bags without the mix wilting or rotting. I finally found a very easy solution for this problem. CANNING JARS! Yup that is right. I am not talking about actually going through the canning process for anything – simply open the bags or cut up the vegetables and store in canning jars (wide mouth) in the fridge until you are ready to eat them. The added bonus is that they are now much easier to travel with – just grab a jar and go. With this process the veggies can easily last up to two weeks. The added bonus with this process is I can stock up on the veggies and take advantage of the best prices at any given point in time.
There is one piece of equipment you need but it is well worth the investment if you don’t already have it. You need a FoodSaver vaccuum sealer with the wide mouth attachment. You can pick up used FoodSavers on Craigslist or Ebay. The wide mouth attachment was only $5 (with free shipping for Prime members) on Amazon.
Simply stuff the jars; place the lid on (not the screw cap) and press the wide mouth attachment down on top. Press the canister button on the FoodSaver – wait for the vaccuum sealing noise to stop; remove the wide mouth attachment from the jar. Make sure your lid is now securely attached. If not, lift it up and make sure all food is out of the way so it doesn’t prevent the sealing; try again.
It takes about ten seconds afterwards for the attachment to “release its’ grip” on the jar. Then it should pop off with only a little effort.
When you are ready to use the veggies – just pop off the lid with a spoon and eat.
You don’t need to put the screw caps on afterwards but my OCD prevents me from skipping that.
As you can see – I did not add any type of liquid or anything. The veggies are in their natural state with nothing added.
Then you just wash them out and re-use later. You can use the original lids since you are not actually canning anything – you do not need to purchase new lids for each “fill”.
