Have you ever cooked with Coconut Oil before? Coconut oil is awesome. I was fortunate to receive a quart sized sample of Gold Label Virgin Coconut Oil from Tropical Traditions! I was so excited when I learned of this opportunity. Tropical Traditions was the first to publish standards for the use of “Virgin Coconut Oil” in terms of edible oils. Virgin Coconut Oil can only be achieved using fresh coconut meat without high heating or further refining. Pure coconut oil has a shelf life of several years.
The Gold Label process uses wet-milling where oil is extracted from the fresh coconut meat without a drying process.

I whipped up a batch of chocolate peanut butter coconut oil fudge for my family. Best part is – no cooking. It takes five minutes to throw it together.
Mix the folowing together:
1/2 cup Gold Label Virgin Coconut Oil slighlty melted
1/2 cup good quality cocoa
1/4 cup raw honey
1/2 cup natural creamy peanut butter (or chunky – your choice)
1/4 teaspoon all natural vanilla
Mix them all together in a bowl. You can either pour it into a pan until it sets or put cupcake liners in a cupcake tin and pour a little in each paper. This is my prefered method. They don’t taste like regular fudge but I would compare it to a dark chocolate peanut butter fudge. It is a much better alternative to all the sugars etc… that are in regular fudge.
Store in refrigerator and eat immediately upon removal. It will set in about fifteen minutes if placed in the freezer temporarily.
