Breakfast on the Go
Since I have been trying to be more aware of what I am eating it has become very clear that breakfast options are a major limitation for me. I need things to grab and go – like my frappuccinos (LOL). Okay so INSTEAD of my frappuccinos!
I love cooking things in muffin tins. They make perfect portion sizes and are easy to store and travel with.
This recipe is very easy and as you will see – Sephora actually put together most of it. First she filled every muffin tin with (after being thoroughly sprayed with PAM or some other alternative) a slice of low sodium ham (you can use any kind you wish). Then she broke 8 eggs (for 12 breakfast portions) into a bowl and wisked them up. She used an old Gatorade mix scoop and put half a scoop in top of each slice of ham.
I put it in the oven on 350. As soon as the eggs started to set I pulled the pan out of the oven and sprinkled cheddar cheese on top. Because everything was hot I needed to do this step although she assured me she could have done it.
To remove from the muffin tin simply grab the corners of the ham that are above the pocket.
EAT! They are delicious.
