My daughter loves her corndogs. But there are many things she loves that I need to come up with healthy alternatives for. Her medication is making her gain quite a bit of weight and quickly. I need to make her more comfortable as quickly as I can. Especially with school just around the corner.
To make this healthier corndog – first and foremost – bake don’t fry.
I simply make a package of the Jiff corn muffin mix as the instructions indicate on the box but I do add in a teaspoon of butter. I tried making them without it and and tastes fine but but they are a little dry. Not so dry you can’t take it but dry enough that as soon as you bite it, it starts to fall apart. Fill your muffin tins (sprayed very well with PAM or some other alternative). Then cut up hotdogs into small pieces and place several (I do 5 or 6 small pieces) into each muffin pocket. Cook on 400 degrees until cooked thoroughly.
Sephora loves them. She happens to be eating them with scrambled eggs – lots of protein.
