Pancakes from Scratch
My kids wanted pancakes today and after agreeing to it – I realized I had no pancake mix.
Ordinarily that would have stopped me in my tracks – purely out of habit. But this time I figured I would make some from scratch – how hard could it be? Well not hard at all. It really didn’t take a whole lot more effort than the store bought box. Even the store bought box of mix we add vanilla, eggs, milk, oil, and cinnamon. How much more to it can there be?
This is the recipe I developed for a large batch. I always try to make enough of them that they can warm some up for a few days if they want to.
3 Cups Flour
5 Teaspoons (heaping) Baking Powder
2 Teaspoons Salt (I use Himalayan Sea Salt
3 Tablespoons Sugar
2 1/2 Cups Milk (or to desired consistency)
6 Tablespoons Melted Butter
2 Teaspoons Vanilla (I use all natural)
2 Teaspoons Cinammon
Mix it all up and cook as you normally would. I do not have a pancake pan so mine never come out as nice/pretty circles but that doesn’t matter once it hits your mouth.
I seriously may not go back to store bought. I could easily prepare my own mix ahead of time by packaging the first 4 ingredients.
