I love quesadillas – some people throw all their leftovers into a soup – me?! I throw everything into a quesadilla.
On the menu today:
Two wheat wraps
Mexican cheese mix
Sour Cream (optional)
I do have a quesadilla maker but wanted to show you another way to make them – with a regular frying plan or flat pan. Simply lay the wrap down on a pan sprayed with Pam and sprinkle a bit of cheese on it.
Add your other ingredients on top – in this quesadilla I used chicken and mexicorn.
Add the rest of the cheese (as much as you want)

When making quesadillas you want to keep them squished together. To do that I just place a pie plate on top and put something heavy into the pie plate. Maybe a large size can of sauce, a weight – whatever you can find.
When I am ready to flip it I don’t use a spatula. If you try that the quesadilla contents will all dump out the contents and make a terrible mess. I just place a plate on top, flip the quesadilla into the plate then slide the now flipped quesadilla back into the pan. Place the pie plate and something heavy back on top until done.
Serve with salsa and/or sour cream. I like mine with salsa – and lots of it!
Other optional contents include peppers (any kind), onions, avocado and more.
