Healthy Skillet Breakfast With Turkey Sausage, Peppers and Eggs

In my efforts to prepare for my New Year’s Resolution to get healthy – I am “practicing” this week because I am off from work and I am having a great time.  I never have time to experiment with foods and this week I have no particular place to be.  My plans include cleaning (decluttering) the house and cooking.

This morning’s breakfast is a skillet breakfast.

Ingredients:

Sweet Turkey Sausage – Package of 8 large links

Red Pepper

Green Pepper

1 Tablespoon of Olive Oil

12 Eggs

 

I could not find any type of sweet turkey sausage that was not in the form of links so I simply peeled the skin off.  The brand I used was Shady Brook Farms and sweet.  There is also a hot option which is simply a matter of preference.  Peeling the casing off was incredibly easy – in fact the casing was so thin I think it would have been more difficult to actually keep it on.

Chop up a green and red pepper.

Add the turkey sausage, peppers and olive oil to a skillet and cook until peppers are soft and sausage is cooked.

Drain any excess liquid.

Mix the eggs and add in to the sausage mixture – cook until the eggs are done.

No one else in my family eats quite this healthy so it is all mine! Obviously I will not be eating this all at once – I eat approximately a cup sized serving and save the rest for future meals.  I do refer to this as a breakfast meal but I am the type of person who is more than happy to eat breakfast foods at any hour of the day.
