Guess What? Valentine’s Day Is Just Around The Corner
We just seem to be flying through the holidays lately. I blinked and Thanksgiving, Christmas, New Years and several family member birthdays are gone. Next we have Valentine’s Day – this is one of my favorite days of the year. All the other days seem to be mostly focused on the kids but Valentine’s Day is something where my husband and I can treat each other special. Sure we treat the kids but it is more about us.
Unfortunately, Valentine’s Day never seems to fall on a weekend. I know that isn’t true but it certainly feels that way. So we end up hoping neither one of us are working that night so we can at least see each other. My plan for this year is to make my husband a nice dinner and a candy tray centerpiece topped with his favorite candy’s.
For dinner I am planning this great chicken stew. It is easy to make after working all day and very quick with the help of my pressure cooker. You can find the full recipe here…
Making a candy tray is also quick and quite easy – you just purchase some of the Starlight hard candies.
To make them simply place a piece of parchment paper on a cookie sheet and lay the starlight candies approximately 1/4 inch apart.
Bake at 350 degrees and keep an eye on them. They will melt together to form a platter in just a few minutes. The candy will begin to bubble around the edges when it melts. If I leave it in the oven too long it will bubble all over, significantly so I need to keep an eye on it. Once it hardens a little bit I can easily remove the parchment paper and use the candy tray to display his favorite candies. The candy tray is very brittle so I must be careful.
Lastly, I need to have just the right (perfect) gift for him. We have been married for 27 years so I try to get him something extra special.
