Some people can’t stand it when bananas ripen too fast or too much – they simply throw them out. I look forward to bananas becoming too ripe – they are so versatile and we use them all the time. Bananas never get thrown out – EVER!
We also always have boxes of cake mix on hand because those are also quite versatile. So today we are whipping up peanut butter chocolate chip banana loaf. We are trying to make it as healthy as possible without giving up the flavor they are accustomed to. So we use sugar free cake mix and powdered peanut butter. We still use chocolate chips though – we don’t really have carob chips anywhere around here.
This is easy as can be – 2 to 3 really ripe bananas; 2 or 3 eggs; 1/2 cup (or more if you want) powdered peanut butter; 1/2 cup chocolate chips and a cake mix. I also decided to add approximately 1/4 cup vegetable oil – sometimes I do/sometimes I don’t.
Bake at 350 until a toothpick comes out clean. I made it as a loaf but could just as easily have made it as muffins. Have fun with it – create your own rules…
