Vegan Peanut Butter and Jelly Bars With PBFit Spread

In September I switched to a vegan lifestyle for my health.  So far my family hasn’t been the least bit interested in following.  However, every now and then I can get them on board with something – which is better than nothing.  Today I made peanut butter and jam bars – as I found on Vegan on Board’s site. I did modify this recipe to use PBFit Protein spread.

PBFit Protein Spread is amazing.  I had already been a huge fan of PBFit but this is my first experience with their new spreads by Better Body Foods.  They have made an even BETTER peanut butter. PBfit Protein Peanut Butter contains 42% more plant-based protein than traditional peanut butters—along with having 12% less fat. And with only 5 (that’s FIVE) whole ingredients, it still tastes like sweet, creamy peanut butter. So go ahead…lick the spoon.

Ingredients

Roasted Peanuts, Pea Protein, Peanut Oil, Coconut Palm Sugar, Sea Salt

Best of all this new spread is 100% plant based.  You can also get PBFit Protein Almond Butter Spread.

Peanut Butter and Jam Bars

These are definitely a hit with my family – of course anything peanut butter and jelly would be for sure.

You need 1 cup  of PBFit Peanut Butter Protein Spread;  3/4 cup Jam – I used Strawberry;  4 tablespoons of maple syrup and 3 cups of Oats

Mix all except the jam together.

Press half of that mixture into the bottom of an 8×8 square pan.  Spread the jam on that layer evenly.  Spread the remaining oat mixture on top of the jam then press down evenly.  Freeze for about a half hour.

Notes:  If you use regular peanut butter you only need 3/4 cup

You can store in the freezer or in the refrigerator – I do the refrigerator.
