Mightylicious vegan cookies, the latest phenomenon to hit the gluten-free food category, have done just this. Their rise to success, including being named one of Food & Beverage Magazine’s 2023 Editor’s Top Products of Fall 2023 edition, is truly impressive, and deliciousness should always reign supreme!

What prompted my interest in Mightylicious?

I have been on a health and wellness journey for over a year. As part of that journey, my diet is mostly vegan, and I have lost 100 pounds and feel better than ever!
As both an advocate of healthy eating and a cookie enthusiast, I was delighted to discover Mightylicious cookies. Starting my experience with them through their oatmeal raisin flavor was nothing less than thrilling, but before diving deeper into my taste test results, let’s investigate why Mightylicious stands out among its gluten-free competition.

Mightylicious Vegan Cookies

Mightylicious is committed to offering products free from gluten, wheat, rye, barley, and RBST for optimal quality and health benefits for everyone who appreciates great cookies! Carolyn Haeler’s journey from JP Morgan to Mightylicious was inspirational and extraordinary. Living with celiac disease herself, Carolyn understood first-hand the difficulties of finding gluten-free treats without compromising taste and texture – she set out on an ambitious quest to craft cookies that were not simply gluten-free but seductively delicious, and she succeeded brilliantly.

Taste Test of Oatmeal Raisin Mightylicious Cookies

At first, I was skeptical. How delicious could a gluten-free, vegan cookie really taste? But from the very first bite, I was hooked – sweet yet chewy oatmeal combined with subtle cinnamon undertones and juicy raisins produced an explosion of flavors I couldn’t believe was gluten-free!
Mightylicious offers more than one flavor: I tried their Grandma Arline’s Oatmeal Coconut and Double Dutch Chocolate Chip varieties as well as Peanut Butter Shortbread Brown Butter flavors; each variety promises the same high level of quality and taste I experienced with Oatmeal Raisin.

Mightylicious’ Industry Recognition: Not Simply Consumer Approval

Mightylicious has earned numerous industry endorsements over time from food and beverage experts such as Food & Beverage Magazine and Eat This, Not That for their exceptional gluten-free offerings, earning recognition not simply based on taste but innovation within this competitive space. These endorsements recognize Mightylicious for standing apart among competitors within its market niche.

Where to Find It: Accessibility Meets Quality

Accessibility is paramount, so Mightylicious makes its products easily available online and at various retail outlets like Walmart, Whole Foods Markets, Costco Kings Market, and Price Chopper. Their broad distribution ensures more people can indulge in tasty yet health-conscious treats! This accessibility is so important to me. I don’t live in an urban area. This ultimately means I often either need to travel far to Whole Foods or order treats online. These cookies are available in many stores near me.
Mightylicious vegan cookies go beyond simply snacks; they represent quality, taste, and inclusivity, all rolled into one delicious treat! Perfect for anyone with dietary restrictions and cookie enthusiasts alike, I can say firsthand from having enjoyed their Oatmeal Raisin flavor that Mightylicious truly lives up to its name – and more.
Mightylicious stands out in an industry where choosing healthier options often means forgoing flavor. Not only can it satisfy nutritional requirements, but every bite gives the satisfaction that comes from knowing you won’t sacrifice flavor for health!

Mightylicious Pumpkin Pie Recipe

Pumpkin pie

Mightylicious is sharing its scrumptious Gluten Free Pumpkin pie recipe – using its Brown Butter shortbread cookie for an amazing GF crust –  it’s sure to please your guests whether they are gluten-free or not!

  • 9″ pie plate
  • Stand or hand-mixer
  • Wooden spoon
  • Food processor or rolling pin

Brown Butter Shortbread Cookie Pie Crust

  • 10 ounces Mightylicious Brown Butter Shortbread Cookies
  • 7 tablespoons unsalted butter, melted
  • ¼ cup granulated sugar

Pumpkin Pie Filling

  1. 11 ounces (308 g) of canned pure pumpkin puree
  2. 3 eggs at room temperature
  3. 10 fluid ounces of evaporated milk or heavy whipping cream
  4. 3 tablespoons (42 g) unsalted butter (melted and cooled)
  5. ½ cup (100 g) packed light brown sugar
  6. ½ cup (100 g) granulated sugar
  7. ½ teaspoon kosher salt
  8. 2 teaspoons pumpkin pie spice
  9. 2 tablespoons (18 g) gluten-free flour blend

  1. Preheat oven to 350°.
  2. Add cookies and sugar to a food processor. Pulse the food processor until the cookies are crushed into a sandy texture. (You can also crush the cookies by hand by placing them in a zip lock back and crushing them with a rolling pin.)
  3. Combine the cookie crumb mixture and melted butter in a large mixing bowl. Stir with a large spoon until incorporated.
  4. Add the cookie mixture to 9” pie plate. Use the back of your spoon to push cookies into the pan, creating an even and packed layer on the bottom and the sides of the plate.
  5. Bake for 8 minutes at 350° and allow to cool.

  1. Preheat oven to 375°.
  2. Combine the pumpkin puree, eggs, evaporated milk (or cream), and melted butter in a large bowl. Whisk ingredients vigorously until smooth and silky
  3. To the same bowl, add the brown sugar, granulated sugar, salt, pumpkin pie spice, and flour, whisking until just combined after each addition.
  4. Pour the prepared filling into the prepared pie crust, and smooth into an even layer.
  5. Place the pie in the oven and bake for 15 minutes at 375°F.
  6. Reduce the oven heat to 350°F and bake for an additional 25 minutes. (When done, the edges will be puffed and set, and the center will jiggle slightly. Each oven is different, so continue to bake if needed.)
  7. When done, remove it from the oven and allow it to cool at room temperature.
  8. Pumpkin pie is a custard, so we recommend chilling the pie in the refrigerator for 1-2 hours to allow the custard to set.
  9. To serve, remove the pie from the refrigerator and leave it there for at least 30 minutes to reach room temperature. Add whipped cream, and enjoy!
