Melt your two sticks of butter then mix that melted butter with your coconut and powdered sugar.
Then start pulling out small pieces and rolling them into balls. Place all your balls on a cookie sheet covered in parchment paper.
Place the balls in the refrigerator for approximately 15 minutes to just let them firm up a little. Then start dipping them in chocolate. You can either fully cover them in chocolate or partially. We like them both ways so I do some of each to add variety.
As soon as the chocolate hardens - enjoy! Or if you are really impatient - they are messy but gloriously delicious when the chocolate is still dripping.
