Healthy Skillet Breakfast With Turkey Sausage, Peppers and Eggs

Ingredients
  • Sweet Turkey Sausage - Package of 8 large links
  • Red Pepper
  • Green Pepper
  • 1 Tablespoon of Olive Oil
  • 12 Eggs
Instructions
  1. I could not find any type of sweet turkey sausage that was not in the form of links so I simply peeled the skin off. The brand I used was Shady Brook Farms and sweet. There is also a hot option which is simply a matter of preference. Peeling the casing off was incredibly easy - in fact the casing was so thin I think it would have been more difficult to actually keep it on.
  2. Chop up a green and red pepper.
  3. Add the turkey sausage, peppers and olive oil to a skillet and cook until peppers are soft and sausage is cooked.
  4. Drain any excess liquid.
  5. Mix the eggs and add in to the sausage mixture - cook until the eggs are done.
