20 Minute Weeknight Chicken Dinner
I get home from work around 6pm and the kids head to bed by 7:30pm. I do not have time to spend 40 minutes prepping dinner. Everything has to be quick with the only real time consumed being cooking time.
First, my kids and I tend to prefer raw vegetables over cooked vegetables. The first step roll some chicken strips in ranch dressing (or honey mustard is another favorite) and put in the oven on 375 for 20 minutes. The dressing makes the chicken so incredibly moist and delicious. My husband also uses this same method when cooking fish such as tilapia or cod.
Then whip up a batch of white rice (sorry I just hate brown rice but if you like it, that is definitely the healthier option).
