Sundays With Sephora – Ooey Gooey Blueberry Fruit Squares

Blueberry Fruit Squares

Needless to say this is our favorite dessert of all time…  WARNING – extremely fattening which is why we only make it approximately twice per year or for events when the leftovers do not come home.

 

This is one of those recipes that I keep in my head and sometimes alter slightly – have fun with it.

Ingredients:

2 sticks butter at room temperature

2 cups sugar

4 eggs

3 cups flour

1 can fruit pie filling

Sometimes I add a little vanilla – today I did not

Mix the sugar and butter together.  As you are mixing, start adding in one egg at a time.

Then slowly add in one cup of flour at a time.

In a 11×14 pan spread 2/3 of the mixture across the bottom of pan (kind of like spreading pizza).  Pour the full pie filling can on top of that layer.  Then “plop” spoonfuls of the remaining batter on top.

Bake at 350 degrees until it is done – think sugar cookie done.

Eat warm but not hot – that bubbly blueberry will burn the roof of your mouth so give it some time to cool down a bit – but you must have your first piece warm – you will be sold on it forever!
