We camp in Maine 6 months per year (when we aren’t working etc…) and one of the things we absolutely love to do is pick Maine’s Wild Blueberries! They seem to be just about everywhere. We use them to make pancakes, muffins and so much more. Today I am bringing you a recipe with frozen wild blueberries (not exactly the correct season at this very moment).
Wild Blueberries are wildly different from the regular blueberries you normally find in the produce section. Don’t be fooled by their size—they pack more into their tiny blue bodies than any other blueberry on the planet! They have a more intense flavor than the blueberries you may be used to. Because they are grown naturally across fields they have complex flavors that include a mix of tart and sweet. They have 2x the antioxidant capacity of cultivated blueberries yielding great health benefits for gut health, diabetes, cancer and brain health. They are frozen as soon as they are harvested to preserve nutrition and taste. They are wild because they are not planted and have grown naturally in barrens and fields in Maine and Eastern Canada for 10,000 years.

This wild blueberry recipe is for 24 muffins and they are a nice rich, moist muffin. I use this batter also for chocolate chip muffins which are my son’s favorite. But me… Anything and everything blueberry is a favorite for sure.

- 4 cups all purpose flour
- 2 cups sugar
- 6 teaspoons baking powder
- 1 teaspoon salt
- 4 eggs (room temperature)
- 2 cups milk (room temperature)
- 12 tablespoons butter (melted)
- 4 teaspoons vanilla extract
- 1 bag of Wyman's Frozen Wild Blueberries
- Preheat oven to 400 degrees.
- Mix all dry ingredients together in a large bowl (flour, sugar, baking powder, salt).
- In a small bowl mix all liquid ingredients (eggs, milk, melted butter, vanilla extract).
- Slowly add liquid ingredients to the dry ingredients and mix well.
- Once thoroughly mixed fold in full bag of Wyman's Frozen Wild Blueberries.
- Scoop into muffin tins that have been sprayed thoroughly and bake until done.
