I love to provide fresh baked desserts for my family. The weekends are the perfect opportunity for me to do so. It really doesn’t take a huge amount of energy to make it happen. Don’t get me wrong – sometimes I make very elaborate dinners and desserts but other times – I just want to give them some comfort food without spending hours in the kitchen. Today was one of those days.
We all have days that are difficult – yesterday was a difficult day for me. One of my most difficult. Just getting out of bed today was a real challenge – staying out of bed was even more of a challenge. But somehow cooking for my family always seems to help.
This recipe is easily created with the help of ingredients I always have on hand in the house. A box of cake mix – we always have plenty of those around because cake mix is incredibly versatile. For this we used yellow cake mix but you can use any flavor for nearly endless variations. Then I need a stick of butter and a can of fruit filling – for this one I used apple. Sometimes I use two cans but today I used one.
The process is simple – you can either use a crockpot or bake in the oven. I chose a large square pyrex dish for this dessert. The first step is to spread the fruit filling along the bottom of the pan…
Then spread the cake mix – straight from the box – over all of the filling.
Cut the stick of butter into squares and lay across the top of the cake mix.
When baking in the oven – 350 degrees for approximately 45 minutes. If using a crockpot – bake on low for 4 hours or high for 2 hours.
Let it cool and serve as is, with whip cream, or even with ice cream.
I made this with French vanilla cake mix, 2 cans peach pie filling and 8 t spoon cinnamon butter.
