There was a time in my life where I couldn’t stand it when bananas would become too ripe.  We would just throw them away and consider that it was a waste of money.  It was so frustrating.  But then I realized all the awesome things I could make with ripe bananas and I have shared many recipes over the years. Now I look forward to my over ripe bananas and actually sometimes even purposely let them get to that point…

Today I am bringing you banana chocolate chip cake – for this recipe I often buy bananas with the sole purpose of making this.  We just patiently (or impatiently) wait for the bananas to get over ripe OR keep an eye out for the “day old” vegetable and fruit bins for bananas.  Then they are even less expensive.

I am also looking for any reason to use my new KitchenAid Mixer.  This is one of the best investments I ever made.  The model I have is the KitchenAid Professional 600 Series in red…

To make this recipe you need:

Banana Chocolate Chip Cake

4 over ripe mashed up bananas

1/3 cup vegetable oil

3 eggs

1 box cake mix

 

Mix all together and bake at 350 until done (insert a toothpick to check for “doneness”)

Now don’t ever throw those over ripe bananas out again – this is delicious and the entire family will love it!
