Gluten Free, Low Sugar, Low Carb – Rocky Road Cookies

I seem to be in a never ending search for the perfect cookie – low sugar or sugar free, low carb, gluten free and low fat.  How hard can it be to find a cookie like that right?

Rocky Road Cookies

This recipe only calls for three ingredients – even better AmIRight?!  One of the ingredients I had to buy on Amazon – VitaFiber.  This was my first experience with this product.  It has the consistency of honey – extremely thick and sticky!  It is a natural, low-calorie, sugar-free, prebiotic, fiber sweetener.  Non-GMO, vegan, gluten-free, dairy-free, and allergen-free with no artificial colors, flavors or preservatives.  It is a better-tasting, better-for you, low calorie natural sweetener that also provides a good source of prebiotics and non-GMO dietary fiber for improved digestive health. Next I need almonds – no salt added.  You will need to grind them up – which I did in my Nutribullet.

The critical ingredient is protein powder from Protein Milkshake Bar or you can purchase it on Amazon.  I used Rocky Road as a flavor because it is a favorite of my husband’s but you could use anything you’d like.


So here is the recipe and based on so many flavors of Protein Milkshake Bar protein powder – have a great time with the versatility.

1 Cup Protein Milkshake Bar protein powder – any flavor

1 Cup ground almonds

1 Cup VitaFiber

Mix all together very well.  The mixture is quite sticky – if you feel it is too sticky just add a little more ground up almonds.  Bake at 350 for approximately 8-10 minutes.  Remove from oven as soon as they start to brown – a little hard to tell with Rocky Road… LOL.
