This is the first time doing “keto” where most of my family has a desire to join in. Now I am on a neverending quest to find and create foods that will keep them happy and interested in this way of life. It is pretty easy to please me – alot less easy to please the kids. This particular recipe is a hit for everyone. Of course who doesn’t love pizza!
First I will note that you can put whatever you want on this Chaffle as long as it is keto friendly. So if you like hamburger, pepperoni, veggies etc – just put them on. Since I was trying to entice the kids I stuck to just cheese – their favorite.
This particular recipe is from 100+ Keto Chaffle Recipes by Sam Kuma. This book actually has multiple “pizza crust” chaffle recipes and this is the first one I tried. I made a double batch for four people and it made 8. However, they are quite filling and we all together only ate 5. I doubt they will be good as a reheated item but I will find out tomorrow.
A single batch (makes 4 chaffles) is as follows:
2 eggs
1/2 teaspoon dried basil
1 cup shredded mozzarella cheese
1 teaspoon baking soda
1/2 teaspoon garlic powder
2 tablespoons almond flour
If you want round chaffles you should get yourself a Dash Mini Waffle Maker. I have one but very seldom have a need for just one or two chaffles. I love the round chaffles better and they are 4 inches and perfectly sized. But to make 8 I would be standing there a while.
For a 4 square waffle maker I highly recommend Cuisinart WAF-300! I love this thing! Thankfully Santa was good to me this year and I found one under the tree!
Once the chaffles are cooked – add keto friendly pizza or marinara sauce and some toppings such as cheese, meats etc… Voila – yes you can do keto and have pizza too!
